The Traditional Bilona Ghee Process – A True Labor of Love
1️⃣ Fresh & Ethically Sourced A2 Milk – The process begins with hand-milking pure-bred Gir cows, which naturally produce A2 beta-casein milk, superior in quality and nutrition.
2️⃣ Natural Fermentation to Yogurt (Curd) – Unlike commercial ghee, where cream is boiled directly, we first convert the A2 milk into curd using natural starter cultures. This fermentation enhances digestion-friendly probiotics and enzymes.
3️⃣ Bilona Hand-Churning (Clockwise & Anti-Clockwise Rotation) – The curd is then slowly churned using the ancient Bilona method to separate raw white butter. This gentle process ensures that no nutrients are lost and that the butter retains its natural goodness.
4️⃣ Slow Simmering for Maximum Nutrient Retention – The extracted white butter is then slowly simmered over a low flame in an iron vessel to remove moisture and transform it into pure, aroma-rich ghee.
5️⃣ Golden Granular Ghee – Naturally Danedar – The final ghee has a distinct grainy texture (danedar), a rich nutty aroma, and is brimming with Omega-3, vitamins, and antioxidants.
